There will be lots of land around the new stadium that they could use. They're building a park where the Dome is right now that could fit a decently sized stage.
Couldn't they still do it in the park if they sell the Civic Center or is it all the same property?
They had 2 stages in the park and 3 in the Civic Center parking lot. It might be possible for them to put 2 sets of side by side stages in the park alone but not very ideal.
If they can't do Central or Centennial then their best bet has gotta be Phoenix II park. They could actually fit a huge crowd there. Lots of parking nearby at the GSU stadium too

Yeah Phoenix II would be their best bet still imo. There's a ton of space for them there. And like you said, lots of parking. Not as Marta convenient but they could just offer a shuttle from the five points station like the braves used to do for games.
What about Candler Park? Is it to hilly and spread out?
Candler park is actually pretty dern small. Most of the greenspace you see on google maps is the golf course (which I doubt they'd want a music fest on right as summer is starting, it's also fairly hilly). Sweetwater 420fest was in candler park awhile back and they could only fit one mediumish stage.

Of course, Piedmont park would be neat but I think it's always booked that weekend and I also don't think people would, understandably, take well to a large music fest on it right at the start of summer since it routinely gets trashed by MM in september.
SK might be different, but I've seen them booked at a couple rock-centric festivals this past year. And SK usually has an act or two that seem somewhat out of place.

I highly encourage you to monitor Nextdoor during Music Midtown this weekend. Always makes for a great read.

lol i've already been reading that and the music midtown subreddit to be fair, i'd be kind of annoyed if i lived nearby too and couldn't get to my home >_>
